Kalakand Recipe

Preparation time: 10 min
Cooking time: 20 min
Number of pieces: 10-12 medium size

Ingredients:
  • 6 cups fresh whole milk
  • 1 cup sugar
  • 1/4 teaspoon cardamom powder
  • 2 teaspoon lemon 
  • Few chopped almonds or pistachios
How to prepare Kalakand Recipe:
  • First take bowl no.1 and pour 3 cups of milk and let it boil on a medium heat, this will take around 10 min.
  • Take bowl no.2 and pour the remaining milk and let it boil on a medium heat.
  • In bowl no.1, once the milk starts boiling, add lemon juice mixed with one tbsp of water and stir it continuously, after 5 min you will notice that the milk starts separating.
  • Take a muslin/soft cotton cloth and transfer the paneer into it.
  • Squeeze out the water as much as you can.
  • Reduce the milk to the half in the bowl no.2 and transfer the paneer into it and let the milk get boiled till all the moisture gets absorbed, this might take around 20 minutes.
  • Once the moisture gets absorbed, its time to add sugar and cardamom powder.
  • Stir it continuously and make sure it does not get burnt at the bottom.
  • Transfer the kalakand into a square shaped plate and spread it equally with a spatula and let it cool for 10 min.
  • Take a knife and shape the kalakand into square and garnish it with chopped pistachios or almonds.
