Chicken Balti Recipe

Preparation time: 5 min
Cooking time: 25 min
Servings: 3-4

Ingredients:
  • 500 gms chicken
  • 3/4 teaspoon salt
  • 3 to 4 fresh green chillies
  • 1 teaspoon ginger and garlic paste
  • 1/2 teaspoon kasuri methi
  • 1 tomato(chopped)
  • 1/2 cup cream
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala powder
  • 2 tbsp yogurt
  • 2 medium onions
  • 2 tbsp oil
  • Few coriander leaves

How to prepare Chicken Balti Recipe:

  • Preheat oil in a bowl, add ginger and garlic paste, saute it for 1 min
  • Add chopped onions and fry it until light brown.
  • Add the chicken pieces with salt, chopped tomato and green chillies and saute it for 5 min, cover it with a lid and simmer it for 10 min.
  • Add fresh cream, yogurt, cumin powder, garam masala powder and kasuri methi powder, cook it for 10 min or until the gravy thickens.
  • Garnish it with fresh coriander leaves.
Taddahh... chicken balti is ready to serve, have it with paratha or rice.

Rogan Josh Recipe

Preparation time: 5 min
Cooking time: 30 min
Servings: 3-4

Ingredients:
  • 500 gms mutton
  • 3/4 teaspoon salt(as per your taste)
  • 1/2 teaspoon kashmiri red chilli powder
  • 3 medium sized onions
  • 1 cinnamon
  • 2 bay leaves
  • 4 cloves
  • 3 cardamom
  • 2 tbsp hung curd
  • 2 cups water
  • 1 teaspoon ginger and garlic paste
  • 1/2 teaspoon fennel powder
  • 2 tbsp oil
  • Few coriander leaves
How to prepare Rogan Josh Recipe:
  • Preheat oil in a kadai. Add bay leaves, cinnamon, cardamom and cloves. Saute it for 1 min.
  • Add chopped onions and fry it until light brown.
  • Add ginger and garlic paste then add mutton with water and salt, cover it with a lid and cook it for 20 min.
  • Add hung curd, chilli powder and fennel powder and further cook it for 10 min.
  • Cook it until all the moisture gets absorbed.
  • Garnish it with fresh coriander leaves.

Taddahh...rogan josh is ready to serve, have it with naan or rice.

Chocolate Rolls Recipe

Ingredients:
  • 2 cups plain flour
  • 1 egg
  • 40 gms butter
  • 15 gms dry yeast(fast action)
  • 3 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup warm milk
  • 1 teaspoon cocoa powder
How to prepare Chocolate Rolls Recipe:
  • Mix flour with sugar, salt, dry yeast, butter and warm milk.
  • Make a soft dough, cover it with a soft cloth and let it rise for 1 hour.
  • Meanwhile take a bowl and mix one teaspoon butter with sugar and cocoa powder.
  • Mix it thoroughly to form a smooth chocolate paste.
  • Once the dough has doubled in size, knead it for 5 min to make it more soft.
  • Make two portions of equal size.
  • Take a rolling pin and roll one part of dough like a round thin chapati.
  • Fill the chapati with chocolate paste and wrap it tightly.
  • Take a knife, cut the wrapped chapati into 4 equal portions.
  • Repeat the same procedure for the second portion dough.
  • Before baking brush the chocolate rolls with egg wash for extra shine.
  • Preheat the oven at 190 degree and roughly bake it for 15 min.

Taddahh... chocolate rolls are ready to serve, have it as a tea time snack.

NOTE: Chocolate rolls should be served warm as it tastes better.You can also use melted chocolate instead of cocoa powder.


Achari Mutton

Ingredients:
  • 500 gms mutton
  • 1/2 teaspoon salt
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon fenugreek seeds(roasted)
  • 1/2 teaspoon cumin seeds(roasted)
  • 1/4 teaspoon turmeric powder
  • 1/2  teaspoon chopped ginger
  • 1/2 teaspoon chopped garlic
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon mustard seeds
  • 2 to 3 green chillies
  • 2 medium sized onions
  • 1 big tomato
  • Few coriander leaves
How to prepare Achari Gosht Recipe:
  • Wash mutton well, and remove all excess fat.
  • Marinate mutton by adding salt, chopped ginger, chopped garlic, turmeric powder, red chilli powder and refrigerate it for 1 hour.
  • Preheat oil in a kadai, add mustard seeds and let it pop, then add onions and fry it until golden brown.
  • Add chopped tomato and cook it until the oil gets separated.
  • Take a blender, grind cumin seeds and fenugreek seeds and make a fine powder.
  • Transfer the marinated mutton into the kadai and cook it for 20 min on a medium heat.
  • Add the grinded powder and garam masala powder into the mutton and further cook it for 10 min.
  • Finally add lemon juice and coriander leaves and simmer it for another 5 min.
Taddahh...achari mutton is ready to serve.Have it with hot rice.

Palak Gosht

Ingredients:
  • 350 gms mutton
  • 3/4  teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 2 cardamom
  • 1 clove
  • 1 cinnamon
  • 2 medium onion
  • 1 teaspoon fresh ginger and garlic paste
  • 2 cups chopped spinach
  • Few coriander leaves
  • 2 tbsp oil 
  • 2 to 3 green chillies
How to prepare Palak Gosht:
  • Preheat oil in a pan, add chopped onion and fry it until golden brown.
  • Add green chillies, ginger and garlic paste and saute it for 3 min.
  • Add mutton, salt, red chilli powder, turmeric powder and all other spices and cook it for 15 min.
  • Meanwhile wash the chopped spinach well.
  • Once the mutton is cooked, add chopped spinach, remaining onion(chopped) and adjust the spices according to your taste.
  • Place a lid and cook it on a medium heat until the spinach is soft and tender.
  • Finally add coriander leaves and cook for further 5 min or until all the moisture is evaporated.
Taddahh...palak gosht is ready to serve, have it with hot rice or chapati.

Roast Chicken Recipe

Ingredients:
  • 1kg chicken with leg joint and skin attached
  • 3/4 teaspoon salt
  • 1 medium lemon
  • 1/2 teaspoon black pepper(as per your taste)
  • 1 teaspoon garlic paste
  • 2 tbsp olive oil
  • 1/2 teaspoon garammasala powder
  • 1/4 teaspoon mustard powder(optional)
How to prepare Roast Chicken Recipe:
  • Wash the chicken pieces well and pierce it from all the sides with a fork, and marinate it with all the spices and refrigerate it for 1 hour.
  • Preheat oven at 180 degree for 10 minutes and place the chicken pieces onto the grill and roast it for 20 min.
  • Once the chicken is roasted, it should be nice, tender and golden colour.
Taddahh...roasted chicken is ready to serve, sprinkle little lemon juice and garnish it with round sliced onion.

Grilled Lamb Chops

Preparation time: 10 min
Cooking time: 35 min
Servings: 3

Ingredients:
  • 500 gms mutton
  • 1 teaspoon ginger and garlic paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon red chilli powder
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
How to prepare Grilled Lamb Chops:
  • Wash the lamb chops and remove the excess fat, add all the ingredients and refrigerate it for 2 hours.
  • Preheat oven at 300 degree for 15 min, place the chops on the rack and grill it for 20 min or until the chops are juicy, tender and turns dark brownish pink.
  • Garnish it with round sliced onion and lemon.

Meat Balls In Sweet and Spicy Sauce

Preparation time: 10 min
Cooking time:  25 min
Servings: 3

Ingredients:
  • 250 gms minced mutton(kheema)
  • 1/2 teaspoon salt
  • 1/2 cup bread crumbs
  • 1/4 teaspoon blackpepper
  • 3 tbsp tomato paste/puree
  • 3 tbsp olive oil
  • 1 teaspoon fresh garlic paste
  • 1/4 teaspoon red chilli powder(as per your taste)
  • fresh coriander/cilantro leaves
  • 1/2 teaspoon cumin powder
  • 1/2 cup chicken stock
How to prepare Meat Balls:
  • Soak bread crumbs in milk for half an hour.
  • Take a big bowl and combine minced meat with bread crumbs, 1 1/2 tbsp tomato paste/puree and all the spices, except chicken stock, refrigerate it for half an hour.
  • Mix all together well and make small balls like koftas, take a pan and pour oil to shallow fry the meat balls.
  • Fry it on a low to medium heat until the colour changes to brown for atleast 15 min.
  • For the sauce, take a bowl add remaining tomato paste, chicken stock, salt, pepper as per your taste.
  • Cook it for 5 min and then add fried meat balls to give it a sweet and spicy taste.
  • Place a lid and simmer it for 5 min, garnish it with fresh cilantro/coriander leaves.
Taddahh... meat balls with sweet and spicy sauce is ready to serve. Have it with pasta or chapati or as a main dish.

Bhuna Gosht Recipe

Preparation time: 10 min
Cooking time: 25 min
Servings: 4

Ingredients:
  • 500 gms mutton
  • 1/2 teaspoon salt
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon mustard seeds
  • 1/2 teaspoon fresh garam masala powder
  • 1 teaspoon fresh ginger and garlic paste
  • 1/2 teaspoon coriander powder
  • 2 to 3 green chillies
  • 2 tbsp yogurt(curd)
  • 1 tomato
  • 1 medium onion
  • few coriander leaves
  • 2 tbsp oil
  • 1/2 teaspoon kasuri methi powder


How to prepare Bhuna Gosht:
  • Wash the mutton well and add salt, red chilli powder, turmeric powder, ginger and garlic paste. Refrigerate it for 2 hours.
  • Take a kadai/non stick pan and pour oil, once the oil gets hot, add mustard seeds and let it pop, add chopped onion, fry it until light brown, add chopped green chillies and saute for 2 min.
  • Add chopped tomato and cook it until the oil gets separated.
  • Add marinated mutton, cover it with a lid and cook on low to medium heat for 20 min.
  • Keep an eye, to make sure that the masala does not get stuck to the bottom of the pan.
  • Take out the lid and add garam masala powder, coriander powder, yogurt, kasuri methi powder and cook for 10 min or until all the moisture gets evaporated.
  • Finally garnish it with fresh coriander leaves.
Taddahh....bhuna gosht is ready to serve. Have it with hot rice and with any chutney.

Chicken Butter Masala Recipe

Ingredients:
  • 500 gms boneless chicken 
  • 1/2 teaspoon salt
  • 1/2 teaspoon chilli powder
  • 1 teaspoon garlic paste
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon kasuri methi powder
  • 1 cup tomato puree
  • 1 cup fresh cream
  • 2 tbsp butter
  • 1 onion(chopped finely)
  • Few cumin seeds
  • 2 tbsp oil
  • Few coriander leaves
How to prepare Butter Chicken Masala:
  • Marinate chicken by adding salt, garlic paste, red chilli powder and refrigerate it for 1 hr.
  • Preheat 2 tbsp butter in a pan and place the chicken pieces one by one and fry it until the colour of the chicken turns very light brown.
  • Take another kadai and pour 2 tbsp oil, add cumin seeds and let it splutter.
  • Add chopped onions and fry it until light brown, add tomato puree, salt, garlic paste, red chilli powder and let it cook for 10 minutes.
  • Then add fried chicken pieces along with a cup of fresh cream, garam masala powder, kasuri methi powder and cook it for another 5 min.
  • Finally add few coriander leaves while serving.
Taddahh...butter chicken masala is ready to serve. Have it with butter naan or rice. If you wish to add little honey to your dish, sprinkle 1 tsp honey while serving.
